The grains of paradise, also called Guinea Pepper or Malagueta Pepper, are the seeds of a plant of the ginger family.
This spice has a spicy and intense aroma with a complex and resinous initial aroma and a spiciness reminiscent of pepper and cardamom in the end.
They are particularly suitable in recipes for Belgian beers such as Christmas Beers, Bière Blanche, Grand Cru and Triple.
Use in 23l: from 5 to 10g. in the last 10/15 minutes of boiling in "All Grain" or "E+G" preparations. For hopped extracts, prepare a separate infusion and add it to the must.
