Endozym AGP 120 is an enzymatic preparation used for the treatment of brewing wort during fermentation. It enables the complete reduction of starch dextrins, converting them into fermentable sugars and improving the degree of fermentation and alcohol potential.

The enzymatic complex allows the hydrolysis of starch and dextrins, releasing fermentable sugars that can be consumed by yeast during fermentation.

Enzymatic composition

Produced through controlled fermentation of fungal and bacterial strains, Endozym AGP 120 contains:

  • Amyloglucosidase: fully degrades α-1,4 and α-1,6 glucosidic bonds in starch, dextrins and oligosaccharides into fermentable sugars.

  • Alpha-amylase: hydrolyzes α-1,4 bonds of starch producing dextrins, oligosaccharides, maltotriose and maltose.

Dosage

  • 3 – 10 g/HL at the beginning of fermentation.

Optimal dosage depends on raw material composition and process parameters such as temperature and fermentation conditions. Laboratory trials are recommended to determine the optimal dosage.
