The Endozym AGP 120 enzyme complex allows the hydrolysis of starch and dextrins into fermentable sugars. The action of dextrinase releases fermentable sugars into the medium to produce a higher alcohol content.
Endozym AGP 120 is a blend prepared by controlled fermentation of fungal and bacterial strains:
-amyloglucosidase, which completely degrades the alpha-1,4 and alpha-1,6 glucosidic bonds of starch, dextrins and oligosaccharides into fermentable sugars;
-alpha-amylase, which hydrolyzes the alpha-1,4 glucosidic bond of starch into dextrins to produce large quantities of oligosaccharides, maltotriose and maltose.
Doses of use:
3-10 gr / HL at the beginning of fermentation. However, the optimal dosage depends on the composition of the raw materials and on the specific process parameters (temperature, fermentation, etc.). Perform several laboratory tests to optimize the dosage.
