Saccharomyces cerevisiae – Premium® Prosecco

Selected wine yeast for high-quality sparkling and semi-sparkling wines.

Premium® Prosecco is a high-performance Saccharomyces cerevisiae strain, specifically selected for the production of still, sparkling and semi-sparkling wines, made using either the traditional method (bottle-fermented) or the Charmat method (tank fermentation). Its aromatic finesse and fermentation reliability make it ideal for enhancing the varietal character of the grapes.

While particularly recommended for sparkling wine refermentation, Premium® Prosecco is also well suited for the primary fermentation of white and rosé musts, where the goal is to highlight the primary aromatic profile of the wine.

It does not produce reductive sulfur compounds and contributes to a clean, complex aroma, without masking the wine’s natural elegance. The strain is physiologically robust, with excellent tolerance to alcohol, SO₂, pressure, and stressful fermentation conditions.
