Potassium metabisulfite (E224) is a product widely used in the wine-making and homebrewing sectors thanks to its antimicrobial, antioxidant and preservative properties. When it comes into contact with water or liquids, it releases sulfur dioxide (SO₂), helping to counteract unwanted microorganisms and oxidation processes.
Homebrewing – Equipment Sanitization
It is particularly suitable for sanitizing equipment used in home beer production, especially glass bottles, fermenters, tubes, caps and plastic equipment.
To prepare the sanitizing solution, simply add 2 teaspoons of potassium metabisulfite to 1 liter of cold water. The solution can be used to rinse and sanitize equipment and, when used at the correct concentrations, does not require rinsing.
WARNING: when used on stainless steel equipment, always rinse thoroughly after treatment and before storing. Metabisulfite can be corrosive to stainless steel, especially in the presence of residues or prolonged contact, potentially causing damage over time that may also be irreversible.

Potassium metabisulfite is widely used in wine production and must processing. It is used to limit the activity of unwanted microorganisms and protect musts and wines from oxidation, helping to preserve their organoleptic properties and stability. It can also be used to sanitize bottles, containers and other winemaking equipment.
