Pumpkin Porter (Homebrewing Pumpkin Beer)

Homebrewing recipe for a pumpkin beer, Pumpkin Porter style, all-grain or extract + grain (E+G). Full-bodied, spiced with cinnamon and ginger, perfect for autumn.

Ingredients for 20 liters:

Pumpkin preparation:

  • 1.5 kg pumpkin, diced and deseeded, baked at 170°C for 45 min

Malts (All-grain):

  • 5.5 kg Bairds Pale Ale malt

  • 450 g Bairds Black malt

  • Pumpkin pieces (add to mash)

Mash:

  • 68°C – 60 min

  • 78°C – 15 min

Boil:

  • 28 g Hersbrucker (60 min, 2.8% AA)

  • 25 g Cascade (20 min, 6.2% AA)

  • 10 g Irish Moss (15 min)

  • 15 g Hersbrucker (10 min, 2.8% AA)

  • 5 g Cinnamon (5 min)

  • 10 g Ginger (5 min)

Yeast: US-05 or WLP001
Priming: 5 g/l

E+G Method:

  • Replace Maris Otter with 3 kg liquid light malt extract and 500 g dark dry malt extract
