The Oak Chips allow to obtain different aromas of aging in cask according to the chosen type. The most famous types of oak chips are the French that gives a delicate aroma with hints of vanilla and the American that gives a more intense flavor. The aroma of oak chips changes also depending on the roasting, more toasted flakes will be the more intense will be the aroma and vice versa. The oak aroma is very easily associated with the English ale and a few Scottish ale, like old Ale, Stout, Porter, Brown, IPA and some Bitter. Some brewers have used the oak in the Belgian style beer, like the Belgian Dark Ale, Saison or Lambic. In general the oak aroma is associated with dark beers, aged or beers that replicate traditional brewing techniques.
