Kveik yeasts ... characteristics and differences

Kveik is a Norwegian dialect word that means "yeast", more precisely traditional Norwegian farm yeast.

They are mixed crops used for generations, which have adapted to the time and conditions of each farm. These are not conventional yeasts grown in the laboratory.

They are yeasts present in Norway for at least 400 years, where in the past they were the only form of yeast available in that area.

In brewing they can also be used for very high temperatures between 30 and 40 ° C

Very fast fermentations are obtained within the optimal temperature range with complete attenuation generally within 2-3 days. The aromatic profile is consistent over the whole temperature range: neutral with subtle fruity notes of orange and citrus.
