LalBrew Pomona™ is a hybrid yeast selected for its aromatic and fermentative performance in hoppy beers. Named after the goddess Pomona, goddess of fruits, LalBrew Pomona™ produces a unique flavor profile with notes of peach, citrus and tropical fruit. This strain was selected with our partner Escarpment Laboratories (Canada) using advanced hybridization and adaptive evolution techniques in the laboratory, in musts with high alcohol concentrations and heavily hopped fermentations. The result is a fruity, stress-tolerant and robust strain ideal for promoting biotransformation and cloudiness in modern IPA styles.

Yeast hybridization science
What has been done by Escarpment Labs? They used hybridization techniques to obtain a yeast strain that is highly aromatic as well as very robust and reliable. Subsequently, they used a process called “Laboratory Adaptive Evolution” to adapt the strain to the fermentation conditions typical of PAHs, improving biotransformation activities and turbidity. The result is a new yeast strain ideal for modern hoppy beers.
